Q: Why would a cat use your bed as a litter box??

On three separate occasions my cat has used my bed as his litter box (doing both duties mind you), of course he does it when I'm not home, because if I was I would NOT allow it...I'm getting tired of washing my blankets and spraying my mattress, and it's coming down to either giving him away or locking him in a carrier for the time that I'm not home (which is hours on end)...any suggestions?

You did not say how old your cat or how long you have had him. But in any event, please do not give him away. There are many reasons for a cat not to use a litter box. In fact, I just recently did a journal on this.
