I have a male, purebred, chocolate lab that we adopted from an animal shelter. When I would just be sitting on the couch watching t.v. or something that is not with him, he makes these weird noses that sound like Chewbacca from Star Wars. We give him enough walks and attention and he makes the noises and steps back slowly. Is it normal? Is it bad? Is it just something to try to get my attention?

Sounds like you may be describing reverse sneezing. Pretty common and not dangerous. You can read about it here:
www.paw-rescue.org/PAW/PETTIPS/DogTip_ReverseSneezing.html

Or google "Reverse Sneezing in Dogs" for more info.
