Q: why do cats eat string?

my cat eats string.

why exactly, i don't know. when i've seen cats choking down string, it's a gradual exercise as they're chewing on it. then a disgusting exercise as i pull it out of their throats.
letting your cat play w/string is very dangerous and can cost you thousands in surgery or your cats life. the string can entangle itself in their throats, stomachs, and intestines and must be removed immediately. if your cat swallows it, keep a close on him/her. any changes in behavior, see your vet. watch their poop for the string to come out. if you don't find the string within a couple of days, get to the vet.

Jillian is absolutely right about string-eating being dangerous. String can bunch up & bind up during digestion causing blockage & sometimes even tearing of the intestines. As far as why they eat string, I'm not sure anyone knows for sure. There are a lot of theories from boredom to stress to extension of play/hunting behavior.
