Most people opt for a puppy cut in hot weather. This should be done professionally by a groomer to keep it even to avoid matting, and to keep you from cutting her.

I wouldn't trim her. Cockers are so cute in their natural state. Just trim her enough to keep her from looking scraggly. If she has extremely long hair, you can shorten it by half so it doesn't drag the floor, but I wouldn't do a lot more than that. It does act as insulation to both cold and heat and some suggest that cutting the undercoat screws up its natural growth pattern.

It's really not recommended that you clip long-haired dogs for summer "cooling", Their hair acts as insulation and keeps them cool. Often trimming their hair makes is counter-intuitive to helping them tolerate the heat. Just remember that if you trim her, always leave enough of the undercoat to provide protection. The only exceptions are for extreme matting and if they have skin issues, like hot spots. It would probably be best to get the advice of a professional.
