Q: What are the options for trimming/shaving horses?

First of all make sure your horses are accustomed to clippers and standing for grooming. Clips range from neatening the bridle path (area where the crown of the bridle goes) to clipping leg feathering (except in certain draft breeds) to full body clips (and hunt clips). Look on line for techniques and the different ways breeds are clipped (and Arabian's bridle path is almost half the length of its neck). Then buy good clippers that will do the job you need done and get your horses used to them. Good luck.

YOu can ask a vet to tell you if there are any classes also if you look on google I 'm sure you could find someone to do it in your area

There are people that do this and you also can take classes. If your on a tight budget then get a book and learn all you can. Then just practice makes perfect.
