Q: Mommy cat is hiding from everyone

I have several cats. I had rescued a mommy, Stacy, and three of her kittens and brought them inside to live with my other three cats. It was bumpy at first and Stacy is very skittish. She may never be a loving cat but I accept that. I brought her in last May 1st.
It's been a long road, but, with patience she has been coming around. She had been eating with all the other cats and interacting with them when I feed them all breakfast and dinner. A week and half ago her one kitten, Simon, no longer a kitten now but a year old, decided to chase her.
As I said, she is very skittish. She ran from him and hid upstairs, under my bed. Now this has become a routine. When he sees her poke her head around the corner of the stairs and try to come to the kitchen, he gives chase and she runs under my bed. Now she does this ALL the time and will not come downstairs at all. The past two days I had been bringing her food which she will come out from behind a dresser to eat. I do not wan to keep doing this, but she was not eating.
I am looking for any solution or anyone who has had similar experiences. I am at a lost as to what to do.

It is possible she may get 'used' to this and come back out or she may be reverting back to survival instincts from being outside? Is Simon the only chaser? Would it be possible for Simon to be places elsewhere? I'm just throwing out any ideas I can think of here : ) hmmm...at feeding time can Simon be put in another room with a closed door so Stacy can eat in peace? You may also have to feed her where she is for the time being. Please keep us posted!
