wheat gluten isn't necessarily bad. the problem w/it being in dog food is 1. it's often used as a filler to replace actual meat, dog's need a lot of meat proteins and dog foods love using plant proteins {such as wheat gluten} to amp up the protein count and fool consumers. and 2. it's a cheap product imported from asia often times ignored by the fda and b/c of that, can cause severe illness or even death in animals. wheat gluten also goes by the name "seitan".

jillian pretty well summed it up. wheat products are a fairly common allergen, not just for humans but for pets as well. in that great big pet food recall years ago, there was something wrong with the wheat gluten contained in those particular products, and that's why they were recalled. it wasn't simply because they *contained* wheat gluten.

gluten can be a very confusing thing. on the one hand, many people are allergic to it, and lots and lots of gluten-free products are available for those people. but gluten in and of itself isn't a "bad" thing, if you're not allergic. in fact, ironically, you can also find boxes of pure wheat gluten in the baking section of some stores, for the purpose of making bread. it can also be used to make vegetarian meat substitutes, sometimes referred to as seitan. if you've never heard of seitan and never tried it, i highly recommend "Primal Strips", a vegetarian jerky. some of their products are wheat gluten based, and they are deeeeeelicious, especially the "mesquite lime" flavor.
