just tell him to sit and keep working onit! give him a bone if he does that will teach him to do it. because then he will want the bone

You must be having difficulty with your greyhound. I have not known them to require any different method than any other dog. Lure them into position with a food treat. If that doen't work, try a toy. They're sight hounds and perhaps a toy would work better. Catch you greyhound sitting and say "sit" to give him/her the word association and then reward with a treat or toy reward and praise.
